Inspired by the sudden drop in temperature:
1 spanish onion - chopped
1 red pepper - chopped
3/4 garlic cloves - sliced
2 tins butter beans, drained & rinsed
2 tins tomatoes
3 bay leaves
1 tsp thyme
1 tsp oregano
1 tsp sweet smoked paprika
Put a good glug of olive oil in a heavy based pan or casserole dish, add the chopped onions, red pepper, garlic & paprika and gently fry until the onion is golden.
Add the tomatoes and herbs and bring back to a simmer.
Add the butter beans, raise to a simmer again, cover and cook for as long as possible.
I have just put this in an oven (gas mark 5) with 4 washed baking type potatoes. I will leave there until the potatoes are cooked (about 1.5 - 2 hours).
